Fall Baking
No baby here yet, so I've been doing some tasty Fall baking instead! I adapted these 2 muffins recipes this morning (didn't have all the right ingredients and didn't want to make a trip to the store!).
Make some yourself and enjoy!
Curry Chocolate Muffins
2 C. flour (I used whole wheat)
3 tsp. baking powder
1 tsp. salt
1 tsp. curry powder
1 tsp. cinnamon
1/2 C. cocoa powder
1/2 C. sugar
3 eggs
1/4 C. oil
1 C. milk (or any other dairy-ish liquid)
1/2 C. chocolate chips (I used 70% cacao chocolate chips)
Mix all ingredients together in any order and scoop into regular size or mini muffin tins (makes 12 regular muffins....not sure how many mini muffins it makes). Bake at 350 degrees for 18-20 minutes.
White Chocolate Pumpkin Muffins
4 eggs
2 C. sugar (I used 1 brown and 1 white)
1 15 oz. can of pumpkin
3 C. flour (I used whole wheat)
2 tsp. baking soda
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 C. white chocolate chips
Beat eggs, then add sugar, pumpkin and oil. Mix all dry ingredients in a separate bowl and then add to the wet ingredients. Add the chocolate chips last. Makes 24 regular size muffins. Bake at 400 degrees for 15-20 minutes. Enjoy!
The kids have had each of these muffins today and both recipes were given 2 thumbs up by my discriminating taste testers!!

hehe, i liked this post... muffins on the table and a bun in the oven! such wonderful blessings in the lewis house!
